Green beans mainly grow in Northern China. Ingredients:

Green beans 1 lb
dried red pepper 15
scallion 2, finely chopped
ginger 2 slices, finely chopped
clove garlic 3, finely minced
cooking wine 1 teaspoon
sugar 1/2 teaspoon
soy sauce 2 tablespoons
salt, to taste
oil 5 tablespoon

 

Steps:

  1. Wash green beans and drain well.
  2. Heat 5 tablespoon oil in a pan over high heat.
  3. Add green beans. Deep fry until the skin gets a black wrinkle look. Transfer to a plate.
  4.  Prepare the sauce: add chopped garlic, ginger, scallion, soy sauce, dried red pepper, soy sauce, salt, sugar and cooking wine to a small bowl. Mix well.
  5. Heat the remaining oil. Add the sauce prepared in step 4. Stir-fry for one minute.
  6. Add green beans and continue to stir-fry for one minute.
  7. Sprinkle some scallion on top.
