Sweet sour hairtail recipe is a simple Chinese food recipe. Hairtail is a traditional Chinese new year food in my hometown(ancient traditional Chinese food Recipes), and hairtail is usually deep fried. This recipe is very delicious, Chinese use same way to cook sweet sour food , like sweet sour spareribs.


Ingredients:

Hairtail: x 2
Onion: 1/2
Green Pepper: 1/2
Red Pepper: 1/2
Garlic: 5 pieces
Ginger: 3 pieces
Green Onion: x 1
Egg: x 1
Cook Wine: 1 tablespoon  (Rice wine substitute)
Salt: 1 teaspoon
Soy Sauce: 2 tablespoon
Vinegar: 2 tablespoon
Sugar: 2 tablespoon
Boiled water: 1 bolw

Steps:

1. Remove the hairtail’s head,fins, viscus and scales, then cut into small pieces, mixed with cook wine and salt for about 5 minutes
2. Cut Onion, green pepper and red pepper into same pieces, slice green onion and ginger, diced garlic
3. mixed soy sauce, vinegar and sugar as seasoning sauce
4. Soak hairtail into the Scrambled egg mixture
5. Stir fry two pieces ginger first, then add haritail pieces with low heat, until hairtail get golden color
6. Stir fry ginger, green onion, garlic, then add onion, 30 seconds later add golden color hairtail pieces
7. Add seasoning sauce and boiled water
8. When boiled turn to low heat continue cooking for 10 minutes
9. Add red and green pepper and turn to high heat.
10. Stir fry and ready to serve.

Tips:
1. use low heat fry the hairtail to golden color, and turn over when one side get ready
